I went through a period a few years ago when I couldn’t cook a pot of dried beans worth a damn. Every bean came out waterlogged and falling apart, like a rained-on newspaper, and on the rare occasion when every bean wasn’t waterlogged and falling apart, it was only because a few holdouts had a mouthfeel closer to gravel. I did everything I was supposed to do: I soaked them, brined them, cooked them without salt, cooked them with salt, cooked them at a simmer, cooked them so a bubble only rarely broke the surface. Two Mondays ago, the night before the moving truck was due to arrive at my mother’s new (Seattle!) house with everything she owns, Brandon suggested making a celebratory dinner. My mother, it was agreed, would choose the menu. After a moment’s hesitation, she requested steak and Caesar salad. We headed out for groceries. I’m not going to go into great depth about the steak. I should begin with a confession: I’m not in Thanksgiving mode yet. Who knows. It’s weird. This holiday sort of sneaks up, I’ve noticed, and then it’s quickly eclipsed by Christmas, which is sad, since Thanksgiving is our only national holiday devoted wholly to eating. This year, we’re heading to New Jersey to visit family, and I will almost certainly make cranberry chutney and probably a chocolate pecan pie, but it’s been hard to plan from a distance. Thanksgiving of 2010, I apologize. I’ll do better next year. On the upside, I ate almost two pounds of carrots today. I’m not sure why, but I keep thinking about my host mother. The whole point

I am pleased to report that we are finally approaching the part of this restaurant thing when we actually get to cook. It’s kind of amazing. The construction is essentially done. There are some details left to complete, like installing acoustic paneling (to cut down on noise), hanging art and mirrors, and setting up the computer system, but we’re very close. Two of our construction workers – I’m not going to say who (rhymes with “Holly” and “Mandon”) – accidentally glued an eight-foot-tall chalkboard to the floor on Sunday, but it’s okay. It came up easily enough. We’re really very close. And we still seem to remember how to cook, which is promising, since that’s the whole point. About ten…

I have a confession to make. It probably seems like I live and breathe to cook, right? It probably seems like I never get tired of stirring and whisking and chopping, like I go to sleep at night spooning the refrigerator and wake up each morning to find a skillet under my pillow and a rainbow arcing gently, benevolently, over the stove.
