I don't usually put icing on my cakes as I like them to stand alone (and this certainly could), but since it was my birthday I whipped up some chocolate frosting for this one. Heaven.

The icing is wonderfully fluffy and glossy. My only change was to toast the coconut before sprinkling it on top. This cake is an absolutely keeper!
